Ingredients
300g block firm Tofu
2 tablespoons barbecue sauce
Lettuce
Cucumber
Capsicum
1/3 Avocado
Red Onion
Gherkin
1/2 small can Edgells Edamame Beans
2tbspsPlant Based Aioli or mayonnaise
Preparation
Mix barbecue sauce and tofu well and place onto a baking tray and bake in oven at 220 degrees for 30 mins turning frequently. Allow to cool.
Prepare a salad of crispy lettuce, chopped cucumber, capsicum, 1/3 avocado, red onion, and chopped gherkin. Add 1/2 small can of Edgells Edamame Beans and add tofu.
Prepare dressing with 2tbsps of plant based aioli or mayonnaise mixed with a little of the liquid from the gherkin pickle jar to make a thick pouring consistency.
When ready to eat add dressing to salad.
