Ingredients
1 salmon fillet
1-2 TBS olive oil
Garlic powder, salt, pepper
Brown rice
1 persian cucumber sliced
1/2 avocado
Sesame seeds
Nori seasoning
Scallions
Spicy Mayo:
1/4 cup mayo
1/2 – 1 TBS Sriracha
1 tsp sesame oil
Preparation
Remove skin from salmon if you’d like and and cut into equal sized cubes
Add to a bowl with a drizzle of olive oil, garlic powder, salt and pepper
Heat about 1 TBS of olive oil on a skillet over medium heat and add the salmon pieces, cook for 3-4 minutes on each side or until crispy
Rinse rice and add it to a pot with double the amount of water and salt, bring to a boil and cover & simmer for 20 minutes
Mix ingredients together for the spicy mayo
Assemble the bowl by adding the rice, salmon, sliced cucumbers, avocado, spicy mayo, scallions, nori seasoning and sesame seeds
